Chimichurri Style Green Sauce

Bright, fresh, and endlessly versatile, this chimichurri-inspired green sauce is one of those recipes you’ll come back to again and again.



Traditionally made with herbs, garlic, oil, and vinegar, chimichurri adds bold flavour without relying on heavy sauces or excess sodium—making it a dietitian-approved way to elevate everyday meals.



From a nutrition perspective, this sauce is a simple example of how flavour and nourishment can coexist. Fresh herbs like parsley and cilantro provide antioxidants and phytonutrients, olive oil contributes heart-healthy fats, and a splash of acid brings balance without the need for added sugar or lots of salt. Rest Time

Although not essential, this sauce is best when left for at least 15 minutes to allow the flavours to meld together.

Add all ingredients into a food processor; start with only 1/2 cup of the olive oil. Pulse until sauce starts to come together.

Add more olive oil if necessary by 1 Tbsp increments, pulsing in between additions, until sauce is well combined. Continue adding oil until food processor is able to run well and create a sauce that is finely minced but not entirely smooth.

Instructions

1/2 cup cilantro

1/2 cup parsley

3 Tbsp red wine vinegar

1-2 garlic cloves

1 tsp dried oregano

1/4 tsp salt

1/4 tsp ground black pepper

small pinch of red pepper flakes (optional)

1/2 - 2/3 cup extra virgin olive oil
